The Blueberry Cheesecake

HelloEverybody today I wanted to show you a recipe of a cake my grandma and I did.
I love fruitcakes in summer! Actually it isn't summer anymore but I think it's still quit warm so a tasty blueberry cake in combination with a cheesecake is perfect!!!

1.So for the cake base you will need:
180g flour 
100g butter( room temperature)
a little bit of salt ( really just a little bit)
50g sugar
1 egg yolk 

Combine the butter with the flour the salt the sugar and the egg yolk. Once all is combined put it in the fridge for an hour. After that you have to line your baking tin with greaseproof paper. Than put your cake base in the tin. Then push it in the tin until all is settled. Than take a fork and prick a few times in your cake base. After that bake just the cake base for 18 to 20 min at 190°. After the 18 to 20 min it really has to cool down it really is important that it really isn't hot anymore!

2.For the filling you will need:
250g sour cream
4 eggs
180g sugar
one sachet of vanilla sugar
250g regular quark
250g Creme fraîche 

Mix all the ingredients together until it's all smooth than grease the sides of you tin with butter otherwise your cake will be stuck in the tin or will break and we don't want that 😉! Than put the mixture on top of your cool cake base and bake it 80 minuets at 160°. It depends a bit on your oven so just have a look on it! When the cake is out it has to cool down and again it really is important it is cold! For the topping you need 480g of blueberries.( Not fresh ones because we also need the juice which is inside the glass with the blueberries!) So put all your blueberries in a sieve and put the juice in a pot and let it simmer. Than put a spoon of starch flour in the juice after that it's going to be a bit milky than it's not ready you have to let it a bit longer on the heat until it's clear again. Than you can but you blueberries on your cake and your juice and that's it! That's the recipe for my blueberry cheesecake I  hope you liked it and maybe you will bake it! I love it!
